Lida's Hot Milk Sponge Cake

4 eggs
2 cups sugar
2 cups flour
2 tsps baking powder
1/2 tsp salt
1 cup milk (heated just to boiling)
1 Tbl butter
1 tsp vanilla
Beat eggs, then add sugar and beat well together. Sift flour, baking powder and salt. Stir into egg mixture.
Heat milk to boiling, remove from heat and melt in butter,
add vanilla. Beat liquid into
flour/sugar/egg mixture until blended.
Do not overbeat.
Pour into prepared tube pan, two 8" layer pans or one
9" X 13" pan. Bake at 350
degrees for 30 to 45 minutes. (Do not
look to check cake before 30 minutes)
*NOTE: The above is for the 'cake' version. For 'cupcakes' use standard size cupcake tins and check for doneness a few minutes earlier than stated for the cake recipe.
Buttercream Frosting
3 3/4 cups powdered sugar
1/2 cup softened butter
3-4 tablespoons milk
1 teaspoon vanilla
Combine all ingredients, beat at medium speed until creamy.

Thanks for using my family's recipe, B! I love the cake. It has a great flavor and texture. You can use any flavor of frosting that you want, or do a fruit filling in between layers.
I've done layer cakes and cupcakes and always had good results.
